BRAND STORY
At the end of the Tensho period (1573-1592), Kayabacho was transformed into a bustling town as the sea was reclaimed in line with the realization of Edo city planning (= "this is how we wanted it"). The area was given its name because many thatch merchants lived there.
Three centuries later, in 1886, Kayabacho continued its tradition of incorporating new ideas, such as opening the first Western-style restaurant in Japan, Yayoiken, which was innovative at the time. In this way, Kayabacho is known as a town where people who are always pursuing new possibilities gather.
We have interpreted and developed the word "KAYABA" as a name that expresses "what we want to do" rather than "what will become." The period in the logo represents completion and symbolizes the highest quality of "The Ramen." The red represents warmth and passion, promising a heartwarming moment.

The Finest Ingredients
- By making everything from the soup, noodles, pork fillets, bamboo shoots, and boiled eggs by hand, they are able to provide their customers with delicious ramen. What is Artisan Ramen?

- Nowadays, there are two categories of ramen restaurants.
- One is the traditional ramen-making method that has been passed down in Japan for a long time. The soup stock is made by simmering chicken, pork, vegetables, etc., and the noodles are made by mixing flour and water, rolling it, cutting it thinly considering the compatibility with the soup, and boiling it in the store. We call this Artisan Ramen.
- On the other hand, the other category is ramen shops that use ramen products brought about by the development and spread of ramen factories and noodle factories. Nowadays, we no longer have to make noodles by hand like in the past; we can purchase high-quality noodles from factories. Soup base can also be purchased from factories. This type of ramen shop has also contributed greatly to the spread of ramen.
- What we want to spread to the world is the greatness of Artisan Ramen. With Artisan Ramen, we offer our customers a ramen experience where they can truly enjoy delicious ramen. By hand-making all the ingredients, including the soup, noodles, char siu, and bamboo shoots, we want our customers to enjoy a unique ramen that is unlike any other.

Goals
- It is difficult to make this Artisan Ramen at home because it takes time and the soup can only be recreated by simmering a large amount of ingredients in a large pot. If you simmer a small amount of soup, it will evaporate quickly and you won't be able to make the same ramen as you would in a restaurant. For ramen that you can easily eat on a daily basis, it's great to enjoy ramen made in a factory by cooking it at home.
